Broccoli Soup

  • 2 or 3 heads of broccoli cut in large pieces or lg bag of frozen broccoli
  • 1 onion
  • 1/2 cup brown rice (before cooking)
  • 3 cloves garlic
  • 2 red or green bell peppers
  • 3 Tbsp Spike or vegetable seasoning
  • 1 juiced lemon

Combine first 4 ingredients in 2 qts of water and simmer covered on low. Roast the peppers until browned. Cut into large pieces, then peel and seed. Puree peppers with most of the broccoli and some liquid. Add puree back to pot and season to taste with Spike and lemon.
