Nutrient-dense Soup
Ingredients
- Olive oil
- 2 each Onions, Carrots, Celery stalks (chopped)
- 4 Cabbage leaves (chopped)
- 1 bunch of greens (chard, turnip, mustard, etc. - chopped)
- 1 bunch Parsley (chopped)
- small can of tomato paste
- large can of chopped tomatoes
- 3 cups or one large can of cooked white beans with liquid if possible
In a deep pot, saute in olive oil the onion, carrot & celery until soft. Season with Spike or other as you go. Then add the cabbage, parsley & greens. Stir occasionally until cooked but not browned. Add tomatoes and tomato paste. Then add in the beans. Keep cooking until everything is tender and hot.
Takes about 1 hour.
